Spicy Grilled Chicken & Veggies
- 2 large boneless, skinless chicken breasts
- 1/2 cup soy sauce
- 1 tsp. each dried herbs -- cayenne pepper, dill, salt, basil, cajun seasoning, garlic powder, freshly ground black pepper, parsley, crushed red pepper
- 1 large onion
- 1 large bell pepper (a colorful assortment makes a nice presentation if available)
- 2 tbs. olive oil
Sprinkle each side of chicken with 1/4 tsp. of each dried herb (adjust to taste -- will be spicy! Add your own favorites to personalize chicken!).
Marinate in herbs and soy sauce at least 1/2 hour. Add more soy sauce if chicken gets dry, making sure each side absorbs sauce. Meanwhile, slice onion and pepper to 1/4' slices. Marinate in olive oil, salt and pepper.
Grill chicken on George Foreman grill (or outdoor grill or grill pan) 10 minutes, flipping after 5 minutes. Check chicken to make sure no pink in center, additional time may be needed for thicker chicken. Then, grill vegetables until tender.
